Allergy-Friendly Mashed Potatoes – Happy Dis-Giving! Collab

Please make sure to check out the playlist with all the other recipes and creators below! Today I’m sharing a California Grill inspired olive oil mashed potato. It’s only four ingredients and super easy. They’re vegan and gluten free so safe for almost everyone! I definitely have notes for things I would do differently in the future so be sure to listen to the entire video so you don’t make the same mistakes as me. Happy Cooking! xo Allison

Original Recipe:
2 pounds yellow fleshed potatoes, like Yukon Gold or German Butterball, peeled and cut into 1-inch chunks
8 garlic cloves, peeled
Step 1: Bring water to a boil in a large saucepan. Add potatoes, garlic and 2 teaspoons salt and cook at a brisk simmer until potatoes are tender, about 15 minutes.
Step 2: Drain potatoes and garlic, reserving 1 cup of cooking liquid. Mash potatoes and garlic. Beat in olive oil and then thin to desired consistency with reserved cooking liquid. Check seasoning and serve.
